To all our American friends: HAPPY THANKSGIVING! Hope you all have someone to share your meal with, hope thereโs a place at a table for you, and hope you have a great meal. Letโs give thanks for our bounty.
Beautiful words, Annie, xo!
The pumpkin bar recipe is amazing, I recommend you try it. I had it the first time at a potluck and it was the item everyone was talking about and trying to find who made it so they could get the recipe!
I really hope you and yours are on the mend. I have meant to send you the recipe I have for Pumpkin Cheeecake since last winter, and will finally do so.
PUMPKIN CHEESECAKE
CRUST: 1 1/2 cups graham cracker crumbs, 2 Tablespoons sugar, 1/4 cup melted butter. Combine all ingredients and press into the bottom of a 10โณ springform pan. Chill while preparing filling.
FILILNG: 12 oz cream cheese, 3/4 cup sugar, 2 teaspoons cinnamon, 1/4 teaspoon ginger, 1/2 teaspoon nutmeg, 1/8 teaspoon cloves, 2 eggs, 1 -1 pound can pumpkin.
Beat softened cream cheese with sugar. Beat in remaining ingredients until smooth. Pour into prepared, chilled crust and bake at 325 degrees for 35-45 mins. or until center doesnโt jiggle when pan is shaken.. Pour on topping and bake an additional 10 minutes. Top with pecan halves (best toasted) placed in a ring around the edge.
TOPPING: 1 cup sour cream, 4 Tablespoons sugar, 1 teaspoon vanilla
whenever I have made this it has been a big success. Please excuse misspell of filling, couldnโt get my cursor to go back to it to fix.
Hope you feel better. Youโre incredible to still do your Sunday dinner being under the weather. You should rest๐ will say a prayer for you and your family to get well.
Thank you so much, Macy, you are incredibly sweet. I finally feel like I turned a corner today!
