1. Dominic finished up another cycle of treatment last night; he fared really well this week, kept busy with hospital bingo, a Kiwi box, and a new Hulk Lego set. He will have multiple scans done towards the end of the month and then we should have a clear picture of what our next steps will be.

I love making ice cream cakesโฆso much fun being creative with the flavors and between the layers crunch.ย I make 6โณ cakes in a spring form pan. I use a variety of basesโฆthin brownie or various cookie crumb flavors.My favorite thing is mixing flavors for the layersโฆusually three. One layer is always vanilla to which I add sprinkles.
I use pintsโฆsometimes ice cream but sometime gelato or even frozen yogurt. It all depends on the combinations I want to create.

Love it when you publish your tips and ideas (like favourite sponges for dishwashing, storage containers etc). I can even get some of them here in UK. Not the sheets, though.

Iโve been making a lot of my standby Salmon Salad for bake-free lunches.
Mix a chunk of hot-smoked salmon with just a little mayo, chopped green onions and some fresh dill weed. Chopped chives too if youโve got โem. A little pepper to taste.
Thatโs it. Can use on open sandwiches, or for an appetiser on crackers, rye bread or Romaine lettuce pieces. Delicious, and healthy.
Oops, itโs Marcia and I meant Dominic, not Joseph. Iโve always thought they look like the otherโs name and mix them up. Sorry.
A super quick and tasty meal is Ree Drummondโs Deconstructed egg roll bowl. It is a big hit at our home and my daughters have loved it in theirs.
