I also love this easy and delicious recipe:
CORNY CORN BREAD
1 cup self-rising cornmeal
3/4 cup self-rising flour
2 tablespoons sugar
1/2 cup vegetable oil
1 8oz can sweet corn cream style
2 eggs
1 cup sour cream
Preheat oven to 375 degrees and grease a 9โณ x 9โณ square baking dish.
Whisk together all the dry ingredients and then add the oil, corn, eggs and sour cream, stirring just until moistened.
Bake for 40 minutes or until golden brown.
I really like the corn bread recipe on Cooking Classy. I have thought about trying Sallyโs (from Sallyโs baking addiction) cornbread too.

Iโm 5โ2โณ. I have a daughter who is 5โ1โณ. Itโs amazing what that extra inch allows me to do. I can reach things on the top shelf โ if Iโm on my tiptoes and itโs right in front.
If you get Cookโs Country, the cornmeal drop biscuits in the most recent issue are amazing and perfect with chili. Great cornbread flavor but lighter and so easy.
Our go-to cornbread recipe is this recipe http://www.mommyskitchen.net/2010/10/bishop-hills-bakery-sweet-corncake.html. I only make a half of a recipe and bake it in my No. 8 Griswold iron skillet. This skillet measure 9 inches across the bottom and it comes out perfect.
Joseph is growing up so fast! I am short too and have climbed store shelves, climbed into freezers and almost jumped into a washer to get to things in the bottom. I have also resorted to asking strangers to reach for things for meโฆlolโฆthe boys are looking good!
My absolute favorite corn bread I actually call corn CAKE and itโs so yummy you could eat it on its own. Really, really simple you take a box of yellow cake mix and two boxes of jiffy corn bread mix and dump them all together. Add all the ingredients each box calls for, mix and pour into a sprayed 9ร13 or, my favorite, a bundt pan and bake for 45-50 minutes (maybe less on the 9ร13). You can also half this recipe by using one box of corn bread mix and eyeballing half of the cake mix* and it will fit perfectly into a 6 jumbo muffin tin lined with cupcake liners or sprayed with cooking spray.
Our family of 5 will eat on this for a couple of days with leftover chili, but it freezes really well if you want to wrap it up for another quick meal later.
*Note: if you half the cake mix and are trying to half the 3 eggs the recipe calls for, I usually use two eggs with no problem.

The cornbread from Melโs Kitchen Cafe is the best. It is definitely more cakey and not the thinner, harder type of cornbread that you would get from a cast iron skillet, but that is why I like it. Everyone I make it for loves it.

This is the absolute best cornbread Iโve ever made. I usually double it and it comes out perfect. Iโve been making it for years, and wonโt make another (well, Iโd like to find a recipe for my new cast iron). I have not ever made the fluffy honey butter. I donโt think it is needed.

Iโm 5โ2โณ and can relate to most of those! Hilarious! There shouldโve been something in there about โcaprisโ being full length pants and maxi โskirtsโ being full length dresses lol! I often joke that pay my tailors rent.
Oh, and speaking of clothesโฆ Iโve ordered Trendsend twice and I love it! They actually take height into consideration and sent me a moto jacket the sleeves werenโt too long on (thatโs a first!), all 3 pairs of pants were โshortโ, and they even explained how to tie an oversize scarf so it wonโt overwhelm my small frame. :)

I am a knitter but I used a nifty knitter first. It is a round loom sold at most craft stores (I work at Michaels and we have lots) It is very easy and I made hats for all my boys (hubby and 2 sons). It is what made me want to lean to knit.
You are so rightโฆJosephโs smile is priceless. It is amazing how little ones magically cross the line from babies toโฆ pre-toddler toโฆ toddler in what seems like a blink of the eye.
